Snickerdoodles

DSCN4982These cookies are delicately crisp on the outside and soft and cakelike on the inside…basically, pure heaven! I make these probably once a year for my dad because he loves them so much (I know, I know, if I were a better daughter, I’d make them much more often).

To make your own little bits of heaven, you will need:

  • 1 cup (1/2 pound) butter or margarine, softened
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 tablespoons sugar
  1. In a large bowl, beat the butter and 1 1/3 cups sugar until creamy.
  2. Beat in eggs and vanilla.
  3. In another bowl, stir together flour, baking soda, cream of tartar, and salt.
  4. Gradually add your flour mixture to your butter mixture and mix thoroughly.
  5. In a small bowl, combine cinnamon and 3 tablespoons of sugar.
  6. Roll dough into 1 inch balls and roll in cinnamon/sugar mixture.
  7. Place 2 inches apart on baking sheets (I never grease them and they come off fine).
  8. Bake at 375 for 12 minutes or until lightly browned.
  9. Let cool on baking sheets for 1 minute then transfer to racks and let cool completely.
  10. Store airtight.

DSCN4983Using my cookie scoop, this recipe make about 3 dozen cookies for me…not nearly enough since I sent most of them to my dad and our are almost gone :(.

  1. I make them about once a month in the summer because we babysit the grands and these are their favorite cookies. I think they are the best ones to have with a cup of tea too.

  2. Oh my gosh Judy that is just mean to post. I am a sucker for crunchy/soft cookies. Heck I am a sucker for any kind of cookies. I am taking a mental note of the ingredients. Good thing I don't have enough butter or my hips would be an inch wider by tomorrow ;D Thanks though I will have to make these for Mommy group or Bible study.
