Banana Bread


This is the perfect recipe for those over-ripe bananas! I love eating warm banana bread with melted butter spread across it!

Banana Bread

1 cup shortening (you can substitute 1/2 of this with applesauce)
2 cups sugar
4 eggs
5 large bananas or more
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup walnuts (optional)

Preheat oven to 300 degrees. Add ingredients in the order listed above. If the bananas aren't over-ripe, you may want to mash them up before adding them. Grease pans (this usually makes about 4 loaves for me). Cook for 75-80 minutes or until toothpick inserted in center comes out clean.

As your bananas become overripe, you can peel them and freeze them. After you thaw them, they will be super mushy, but it works out perfectly!
