Chicken Taco Soup

I got this recipe from a friend at church and love it because it's fairly easy and it can be done either on the stove or in the crock pot. It tastes great every time!

Chicken Taco Soup:

Ingredients:
2 boneless chicken breasts-simmer then save and use broth for the soup. Cut chicken into chunks or shred it.
1 tsp olive oil
1 cup chopped onion
1-2 cloves of minced garlic

Saute the onion and garlic in olive oil until translucent (you can also add green peppers)

Put in large pot and add:
1 pkg taco seasoning mix
1/2 tsp chili powder (optional)
1/4 tsp ground cumin
1 Tbs lime or lemon juice
1 cup or jar of chunky style salsa
1 cup frozen or canned corn
1 lg. can diced tomatoes
1 can black or kidney beans
1 cup chicken broth

If preparing on stove top, bring to a simmer and continue simmering for 10 minutes. Stir occasionally.
If preparing in the crock pot, you can put all the ingredients in raw, including chicken, and cut/shred the chicken when it's cooked through. Cook for at least 6 hours on high or until chicken is done.

Serve with chips or tortillas, sour cream and grated cheese and enjoy the warmth that soup brings on a chilly day!
